RECIPE: Mango Guacamole
This installment of CS Recipes comes to you from the best chef I know… my mother. We're still keeping it simple over here - if you can chop up fruits and vegetables, you can make this (and if you can't, you should probably learn!).
Mango guacamole. It's not guacamole that you normally know, all mashed up and green, but think of it as guacamole, pre-mashed. Kind of salsa looking… you can call it salsa-mole. Maybe guaca-salsa? It consists of your typical ingredients, spiced up with a Filipino touch by throwing in some chopped mango. Super easy and super summery.
You can adjust the amount of each ingredient according to your tastes. I generally like to go heavy on the avocado, then mango, then tomato, but you can do as you wish, just make sure it's all ripe!
Ingredients:
2 medium avocados
2 medium mangoes
2 small tomatoes
1 small jalapeno pepper
about 1 tablespoon chopped onion (or shallots)
about 1 teaspoon chopped cilantro
salt & pepper, to taste
Directions:
Basically… dice them all up, toss in a bowl, season with salt and pepper, and you're good to go. I like to wait a little bit to let the flavors meld together. Diced cucumbers wouldn't hurt in here either if you want some extra crunch. Ideally, I serve this with shredded Monterey jack cheese and a bit of sour cream - it's great to eat it with tacos!
