RECIPE: Pumpkin Sage Bread

This time of the year, we celebrate the almighty pumpkin. Here’s one way to get your pumpkin fix – a savory bread that I like to eat with hummus or just as is. Plus, this bread can also be enjoyed by gluten-free eaters!

Pumpkin Sage Bread

You’ll Need:

6 eggs
1/2 cup coconut flour
1 t sea salt
1 t baking soda
1/2 cup flaxseed meal
1 cup pumpkin puree
t T dried sage
1 lemon – juice and zest
3 garlic cloves
A handful of flax seeds (to sprinkle on top – adds a nice crunch!)

Get Baking!

1. Preheat oven 350 F
2. Whisk together the dry ingredients and set aside
3. Beat the eggs and whisk in the pumpkin, lemon juice and zest, sage, and garlic
4. Slowly, add the dry mixture and mix until well combined
5. Pour into a greased medium sized bread pan and then sprinkle on flax seeds
6. Bake for 50-60 minutes, let cool for 10, then enjoy!
